    An authentic Parisian patisserie in the heart of bustling Fes? Well, it doesn’t get more authentic than at Paul: Maison de Qualité, a French icon that’s become a global boulangerie powerhouse, with branches from Spain to Singapore.

    This outpost in Fes’s Nouvelle Ville opened in early 2013, directly opposite one of the new city’s many fountains — this particular water feature seems to play host to a modern sculptural take on the classic palm tree.

    Inside, shiny hardwood floors, paneled walls, wrought-iron light fixtures, wood-beamed ceilings, and painted brick walls are reminiscent of the thousands of bakeries found in the City of Light, and spotless glass cases showcase jewel-like macaroons, eclairs, apple tarts, opéra cakes, and much, much more.

    But don’t get greedy and rush straight to dessert: the savory selection is just as mouthwatering. We passed over the onion tarts, quiche Lorraine, and ham-and-cheese croissants in favor of a chicken Caesar sandwich on a delicious fresh baguette. The cool air conditioning offers a welcome break from the Moroccan sun, and Paul’s prime corner location means you can sit back and watch Fes whiz by in all directions, all the while sipping on a milky café au lait. C’est la vie!
